Horses that "stab" their hind feet (that's what we used to call it) are sore over their whirlbone area and most likely their hocks as well.
This soreness may not be very pronounced since it is on horses that work on a genarally soft surface but I would be willing to bet you a dollar to a donut that it's worse the day after hard work...... let me know..
Also... how is the horse shod in front? If he has any tendancy to overreach or crossfire then I would look at seeing if I couldn't speed up his front end to get him out of his own way a little faster. He may be anticipating interference.
